Cauliflower Pizza Crust

Joey loves Pizza, and so do all of us!

But every time after gorging on one, I used to have these guilt pangs. 😦 Please don’t overestimate my fitness level, I am not a superwoman! I just try to be one with minimum effort possible. 😀 And.. and.. and.. Pizza only deserves love and respect, not guilt, so let us all hold hands and take a bow!

What you need:

Cauliflower (Ain’t no sunshine without Sun) One medium size cauliflower can make approximately 6 small crusts.

Parmesan cheese- 1/2 cup for a medium to large cauliflower

Mozzarella cheese- 1/2 cup

Salt to taste

Black Pepper or Red Chilli Flakes to taste

Herbs of your liking: Thyme, Basil, Parsley, Oregano

One egg to bind everything together

[I like to use fresh basil and thyme like (ajma) leaves that I grow at home]

Toppings: Sauce, cheese, veggies and herbs of your choice. (These flourless crusts taste so good alone that I end up not adding any toppings every time I bake them.)

Method:

Remove the stems of the cauliflower and cut it into pieces. Wash it and grind it for 30 seconds, it should look like snowflakes. Now transfer the cauliflower into an ovenproof bowl and microwave it for 3-4 minutes for it to leave the water. Keep it aside to let it cool. In the meantime, you can grate your mozzarella.  When the cauliflower snow is back to room temperature, squeeze out all the excess water using a kitchen towel. Not doing this will make your crust soggy, so don’t be lazy.

Preheat your oven to 400 degrees and put a parchment/baking sheet on the oven tray. You may grease it by using oil or spray if you are unsure of the crust texture.

Bind the cauliflower, herbs, seasoning, cheese and egg together and carefully put the mixture balls on the tray and pat/shape them into pizza bases. I prefer small to medium size for more even baking. They should neither be thick nor thin. If your oven is set to 400 degrees, the crusts should be ready in 10-15 minutes. I set mine to 200 degrees and it takes them around 30-35 minutes to bake to my liking.

Now, wait for the oven to make its ‘ting’ sound. Walk around and burn some calories till then. (It’s all about feeling good!) Once done, open the door to happiness, take the happiness out and do a little dance. Don’t forget to wear oven mittens! Now, if you still have some patience left, top them up with sauces, herbs and veggies you fancy. I like them organic!
